Peanut Sauce

Prep time: 5 minutes

Servings: 1/4 cup

Ingredients:

  • 1/2 cup peanut butter natural, unsweetened
  • 2 tablespoons low-sodium soy sauce, or use tamari or coconut aminos for gluten-free
  • 1-2 tablespoons apple cider vinegar, red wine vinegar or rice vinegar (more or less to taste)
  • 1-2 tablespoons brown sugar or honey (more or less to taste)
  • 1-2 teaspoons chili garlic sauce, chili flakes, sriracha or Tabasco (more or less to taste)
  • 1 tablespoon fresh lime or lemon juice
  • 3 garlic cloves pressed or grated
  • 1 tablespoon ginger root, grated
  • 2-4 tablespoons hot water

Directions:

  1. Combine all ingredients except water. Whisk to fully combine.
  2. Add water, 1 tablespoon at a time, until the desired consistency is reached. It’s suggested to use 2 tablespoons of water for a sauce and up to four tablespoons of water if using it as a dressing.

Notes:

This recipe uses unsweetened peanut butter. If you use conventional peanut butter, the sauce may turn out too sweet. Try reducing the brown sugar to 1 tablespoon. This recipe can be used as a dipping sauce for vegetables, salad dressing, peanut noodles or drizzled on meat/tofu. Play with the ingredients to find your favorite combination of sweet and spicy.
