Spicy Noodle Soup

Servings: 4

Ingredients:
  • 1 tablespoon sesame oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons fresh grated ginger
  • 4 cups vegetable broth
  • 2 cups water
  • 2 tablespoons soy sauce (or tamari if gluten-free)
  • 2 teaspoons Sriracha
  • 1 teaspoon rice vinegar
  • 8 ounces rice noodles
  • Optional garnishes: Sliced green onions, chopped fresh cilantro and sesame seeds
Directions:
  1. In a large pot, heat the oil over medium heat. Add the onion and cook for 4 minutes or until softened.
  2. Add the garlic and ginger and sauté for 1 minute until fragrant.
  3. Add the broth and water. Increase heat to high and bring to a boil.
  4. Stir in the soy sauce (or tamari), Sriracha and rice vinegar.
  5. Add the rice noodles to the pot and allow them to sit for a few minutes until softened.
  6. Garnish with optional toppings, if using, and serve immediately. 
Notes:

For best results, serve/enjoy immediately once done cooking. This recipe is high in sodium but using low-sodium soy sauce, low-sodium broth you can reduce the amount of sodium.
