Roasted Parsnips and Carrots

Ingredients:
- 2 parsnips, cut into 2-inch sticks
- 2 pounds carrots, cut into 2-inch sticks (any color)
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon onion powder
- Tasty Tahini Dressing, drizzle on top (optional)
Directions:
- Preheat oven to 400 degrees.
- Toss parsnips and carrots with oil and seasonings. Spread out evenly on a sheet pan.
- Roast for 20 minutes then stir the vegetables around on the tray.
- Roast for an additional 20 minutes or until they are tender and well-roasted.
Notes:
Roasting vegetables is the easiest way to bring out their natural sweetness, and that is no exception with these roasted parsnips and carrots! They make a perfect side and add lots of color to your plate.
