Roasted Parsnips and Carrots

Prep Time: 15 minutes

Servings: 6

Ingredients:
  • 2 parsnips, cut into 2-inch sticks
  • 2 pounds carrots, cut into 2-inch sticks (any color)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • Tasty Tahini Dressing, drizzle on top (optional)
Directions:
  1. Preheat oven to 400 degrees. 
  2. Toss parsnips and carrots with oil and seasonings. Spread out evenly on a sheet pan. 
  3. Roast for 20 minutes then stir the vegetables around on the tray. 
  4. Roast for an additional 20 minutes or until they are tender and well-roasted.
Notes:

Roasting vegetables is the easiest way to bring out their natural sweetness, and that is no exception with these roasted parsnips and carrots! They make a perfect side and add lots of color to your plate.
