Mashed Parsnips

Servings: 2

  • 1 pound parsnips, peeled and sliced
  • ½ teaspoon minced garlic
  • ¼ cup Greek yogurt
  • Splash of milk
  • Salt and pepper, to taste
  1. Put the parsnips in a steamer basket and steam until tender. It should take about 20-25 minutes.
  2. Once tender put the parsnips in a blender or food processor. Blend with garlic, Greek yogurt and enough milk to get the blender moving. Season with salt and pepper to taste.

Parsnips are a great source of fiber, vitamin C, vitamin K and folate, as well as other important micronutrients.
