Prep Time: 30 minutes
- 1 pound parsnips, peeled and sliced
- ½ teaspoon minced garlic
- ¼ cup Greek yogurt
- Splash of milk
- Salt and pepper, to taste
- Put the parsnips in a steamer basket and steam until tender. It should take about 20-25 minutes.
- Once tender put the parsnips in a blender or food processor. Blend with garlic, Greek yogurt and enough milk to get the blender moving. Season with salt and pepper to taste.
Parsnips are a great source of fiber, vitamin C, vitamin K and folate, as well as other important micronutrients.
