Cauliflower Rice

Ingredients:

  • 1 head of cauliflower, core removed, cut into florets
  • 1 tablespoon olive oil
  • Salt and pepper
  • Sliced green onions for garnish

Directions:

  1. Blend half the cauliflower florets in the bowl of a food processor. Pulse until they resemble couscous. Repeat with the remaining florets.
  2. Heat oil over medium heat in a large skillet with a lid. Add cauliflower. Season with salt and pepper. Cook and stir for 1 minute. Cover and cook for 5 to 6 minutes, stirring once.
  3. Garnish with sliced green onions. Serve warm.
