Halloween Banana Popsicles

Prep time: 15 minutes

Servings: 14 popsicles (8 ghosts, 6 mummies)

Ingredients:

For the banana ghosts

  • 4 large fresh bananas (not overly ripe/soft)
  • 1 cup low- or no-fat Greek vanilla yogurt
  • 2 tablespoons powdered sugar
  • Mini semi-sweet chocolate chips for eyes
  • 16 popsicle sticks

For the banana popsicle mummies

  • 1/3 cup creamy peanut butter
Directions:

For the popsicles

  1. Line a large baking sheet with parchment paper or a silpat mat.

 For the ghosts

  1. Peel two bananas and slice each in half, cross-wise. Slice each half in half again the "long" way, so that you have four long, narrow pieces total.
  2. Carefully insert a popsicle stick into the bottom of each piece, then place on the baking sheet.

For the mummies

  1. Cut the pointy tips off the two remaining bananas, then slice the bananas cross-wise into three equal round "logs."
  2. Insert a popsicle stick into one end of each "log," then place on the baking sheet.
  3. Freeze all banana pops for at least 30 minutes or overnight.
  4. Once the bananas are frozen, mix together the yogurt and powdered sugar in a small bowl.
  5. Dip each frozen popsicle into the yogurt mixture, then return them to the lined baking sheet.
  6. Place two mini chocolate chips on each of the ghosts for eyes. (Do not place the eyes on the mummies yet!)
  7. Return popsicles to the freezer for at least one hour to allow the yogurt to set.
  8. Microwave the peanut butter in a small, microwave-safe bowl, heating until smooth and creamy (about 30-45 seconds) and stirring as needed.
  9. With a small spoon, drizzle the top of the frozen banana mummies with the heated peanut butter to make "bandages."
  10. Place two mini chocolate chips on each of the mummies for eyes.
  11. Return popsicles to the freezer until the peanut butter is firm (about 30 additional minutes).
  12. Enjoy immediately or freeze for later. When ready to serve, let the banana popsicles soften at room temperature for a few minutes.
Notes:

Freeze leftover banana popsicles in a ziptop bag for up to two months.
